When I started running, I would usually run in the evenings after the kids were settled and/or in bed. That meant I would usually have a very light and early dinner so I wasn’t running on a full stomach later. Now there are all sorts of opinions on whether to eat or not to eat before going to bed. Whatever the verdict is, I don’t care, I was starving by the time I finally showered and sat with a tea for the night. I didn’t want to break the calorie bank but I did want something satisfying that would also taste great. I first saw a version of this dip from Jillian Michaels www.jillianmichaels.com then modified it to save on calories by using peanut butter powder instead of real peanut butter, and I lessened the amount of natural sweetener. I would actually look forward to running just so I could have this later on in the evening.
3/4 cup of 0% fat greek yogurt
2 tbsps PB2 powder
1/2 tsp vanilla extract
1/2 tsp pure maple syrup/agave nectar/honey – to taste
(about 175 calls for the entire portion)
Stir the ingredients together and have it with an apple or berries. Sometimes I added cocoa powder and omitted the natural sweetener, or if I was low on protein that day I might add some protein powder. Even though I always had an apple with it, I usually ended up eating the dip with a spoon…it was a lifesaver when I was trying so hard to make changes. It makes a lot though, so you can probably get three portions from the recipe above if using it as a fruit dip.
